Chicken Carnitas Tacos

What you need:

  • 2 lbs. boneless skinless chicken thighs
  • 1 tsp. ancho chili powder
  • 1 tsp. kosher salt
  • 1 tsp cumin
  • 1/2 tsp. paprika
  • 1/2 tsp. garlic powder
  • 1/2 tsp. onion powder
  • 1/2 tsp. oregano
  • 1/2 tsp pepper
  • 2 limes, juice
  • 12 corn tortillas
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup onion, diced
  • 1 cup green salsa

Step 1 Mix together the spices. Add the chicken and spices to the slow cooker. Toss to coat. Cook on low for 3-4 hours until the chicken is tender and cooked through. Shred the chicken using two forks. Oven and Instant Pot options in notes.

Step 2 Remove the chicken using a slotted spoon. Place on a foil-lined baking sheet in a single layer. Broil for 6-8 minutes until browned and crispy on the edges.
