These easy and healthy crispy carrot fries are a great alternative to traditional fries. They come out crispy and crunchy and can be seasoned so many different ways.

Preheat oven to 450 degrees. Cut the carrots into matchsticks. Toss with olive oil, salt, and pepper. Spread out on a prepared baking sheet (optional to use parchment paper for easier cleanup and so that fries won’t stick to the pan).

Bake for 16-18 minutes, shaking once, or until browned and tender. Crack the door open every few minutes to help let the steam escape faster. For crispier fries, bake for an additional 5-10 minutes.
