What you need:

  • 2 cups whole wheat flour (or all purpose)
  • 3/4 tsp salt
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 eggs
  • 1/4 cup olive oil (or coconut oil)
  • 1/4 cup unsweetened applesauce
  • 3/4 cup brown sugar
  • 1 cup zucchini, zucchini
  • 1 cup carrots, grated

Step 1 Preheat the oven to 375 degrees. Spray a 9 X 5 bread pan with cooking spray or cover with parchment paper. Combine the flour, salt, baking powder, baking soda, cinnamon, and nutmeg in a bowl.

Step 2 In another bowl combine the eggs, olive oil, and applesauce. Stir in the brown sugar. Then stir in the carrots and zucchini.

Step 3 Add the dry ingredients to the wet ingredients and stir until combined. Pour the batter in the prepared bread pan.

Step 4 Bake for 55-65 minutes or until baked through.
