What you need:

  • 9 eggs
  • 1/4 cup skim milk
  • 1/2 tbsp Dijon mustard (optional)
  • Salt and pepper to taste
  • 1.5 cups broccoli, steamed and chopped (or defrosted frozen)
  • 3/4 cup reduced fat shredded cheddar cheese
  • 2 green onions, chopped

Step 1 Preheat the oven to 350 degrees. Whisk together the eggs, milk, mustard, salt, and pepper. Stir in the broccoli, green onions, and cheddar cheese.
