Broccoli Cheddar Egg Muffins
Broccoli Cheddar Egg Muffins are packed with protein for a healthy, portable breakfast or snack that will keep you going all morning.
What you need:
- 9 eggs
- 1/4 cup skim milk
- 1/2 tbsp Dijon mustard (optional)
- Salt and pepper to taste
- 1.5 cups broccoli, steamed and chopped (or defrosted frozen)
- 3/4 cup reduced fat shredded cheddar cheese
- 2 green onions, chopped
Preheat the oven to 350 degrees. Whisk together the eggs, milk, mustard, salt, and pepper. Stir in the broccoli, green onions, and cheddar cheese.
Spray a standard muffin tin with cooking spray or line with paper liners. Pour in the egg mixture and bake for 18-22 minutes until cooked through and puffy.
