Basil Tofu with Green Beans

What you need:

  • 4 cups green beans, trimmed
  • 1/2 cup water
  • 2 tbsp olive oil, divided
  • 1/2 red onion, diced
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • 20 oz extra firm tofu (pressed and cut into 1 inch cubes)
  • 2 tbsp low-sodium soy sauce
  • 1 lemon (juice and zest)
  • 1 cup fresh basil leaves, chopped

Step 1 Heat a medium skillet over medium high heat. Add the green beans and water. Cover and cook for 4-6 minutes until green beans are tender crisp and bright green. Remove and wipe the pan clean with a paper towel.

Step 2 Add half the olive oil to the pan over medium high heat. Add the onion and cook for 4-5 minutes until beginning to soften.

Step 3 Add the garlic and red pepper flakes. Cook for one minute until fragrant.

Step 4 Add the tofu in a single layer. Season with fresh pepper. Cook for about 3-4 minutes until beginning to brown and crisp. Continue cooking for 4-8 minutes, flipping as needed to brown on all sides.

Step 5 Add the green beans back to the pan. Add the soy sauce, lemon juice, lemon zest, and basil.

Step 6 Cook for about 1 minute until basil is just wilted. Taste and season with salt and pepper as needed.
