List of Ingredients:

  • 1.33 lbs shrimp, peeled and deveined
  • 1 tbsp lime juice (or lemon juice)
  • Salt and pepper
  • 1 tbsp cornstarch
  • 2 tsp vegetable oil
  • 4 tbsp light mayonnaise
  • 4 tbsp Nonfat Greek yogurt
  • 3 tbsp sweet chili sauce
  • 2 tsp Sriracha (adjust to taste)
  • 3 cups shredded cabbage slaw
  • 1/4 cup cilantro, chopped
  • 1/4 cup green onions, chopped
  • 8 corn tortillas
  • 1 lime (for serving)

1 Mix together the yogurt, mayonnaise, Thai sweet chile sauce, and Sriracha to make the bang bang sauce. Taste and adjust flavor as needed. If you like more sweetness, drizzle in some honey.

2 Mix half of the bang bang sauce with the cabbage and combine. Set aside.

3 Dry the shrimp with a paper towel. Squeeze the lime juice over the shrimp and season with salt and pepper. Toss with the cornstarch.

4 Tp pan-fry: Heat the oil over medium-high heat and add the shrimp to one layer. Cook for 1-3 minutes until browned and slightly crispy. Flip and cook on the other side until cooked through, about 1-2 minutes. Grill: Heat the grill over medium-high heat. Add the shrimp to a grill basket, thread it onto skewers, or place it on a piece of foil so it doesn’t fall through the grill grates. Cook for 1-2 minutes per side until cooked through. Air Fryer: place the shrimp in the basket of an air fryer preheated to 400 degrees. Cook for 5-6 minutes, shaking the basket halfway through.

5 While the shrimp is still warm, toss it with half of the bang bang sauce.

6 Serve the shrimp in warm corn tortillas with crunchy slaw, cilantro, and green onions. Squeeze lime juice over top.
