Banana Chocolate Chip Pancakes

What you need:

  • 1.5 cups white whole wheat flour
  • 2 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/8 tsp salt
  • 2 bananas, mashed
  • 1 cup nonfat milk (or alnond milk)
  • 2 eggs
  • 1 tbsp coconut oil (melted or melted butter)
  • 1 tsp vanilla extract
  • 1/3 cup chocolate chips (I prefer mini chocolate chips)
  • cooking spray

Step 1 In a large bowl mix together the dry ingredients - flour, baking powder, cinnamon, and salt. In another bowl, stir together the mashed bananas, milk, eggs, coconut oil, and vanilla extract in a bowl.

Step 2 Combine the wet and dry ingredients and mix until just combined. Fold in the chocolate chips.

Step 3 Heat a griddle (or skillet) over medium-low heat. Spray with cooking spray or brush with oil. Add about 1/4-1/3 cup for each pancake cook for 2-3 minutes until the air bubbles begin to pop and the bottom is golden brown. Repeat until all the pancakes are cooked.
