Baked Oatmeal Muffins

What you need:

  • 2 cups old fashioned oats
  • 2 tbsp flaxseed meal
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1/2 tsp kosher salt
  • 2/3 cup unsweetened almond milk (or skim)
  • 2 ripe bananas, mashed
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract
  • 2 eggs

Step 1 Preheat the oven to 375 degrees. Spray standard muffin tin with cooking spray or line with muffin liners. In a large bowl, mix together the oats, flaxseed meal, cinnamon, baking powder, and salt.

Step 2 In another bowl, mix together the milk, bananas, egg, maple syrup, and vanilla extract.

Step 3 Add the wet ingredients to the dry ingredients and stir until combined.

Step 4 Fill each muffin around 3/4 of the way full and bake for about 18-20 minutes until a toothpick comes out clean. Let cool for at least 10-15 minutes before serving and then place on a wire rack.
