- 2 cups rolled oats
- 2 tbsp flaxseed meal
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp kosher salt
- 2 cups unsweetened almond milk (or skim)
- 2 ripe bananas, mashed
- 3 tbsp pure maple syrup
- 1 tsp vanilla extract
- 1 egg
Preheat the oven to 375 degrees. Spray an 8 X 8 baking sheet with cooking spray. In a large bowl, mix together the oats, flaxseed meal, cinnamon, baking powder, and salt.
In another bowl, mix together the milk, bananas, egg, maple syrup, and vanilla extract.
Add the wet ingredients to the dry ingredients and stir until combined.
Pour into the baking dish. Bake for 35-40 minutes until cooked through and lightly browned on top.
Top with fresh fruit, nuts, and/or maple syrup.
