What you need:
- 1 large eggplant
- 1 tbsp olive oil
- 2/3 cup seasoned breadcrumbs (whole wheat or regular)
- 1/4 cup Parmesan cheese
- 1 tsp garlic powder
- 2 egg whites
- Cooking spray

Step 1
Preheat the oven to 450 degrees. Cut the eggplant into fries, about ½ inch thick. Toss the eggplant with olive oil, salt, and pepper.

In a shallow dish, combine the breadcrumbs, Parmesan cheese, and garlic powder. Whisk the egg whites in a shallow dish.
