Baked Eggplant Fries
Learn to make these crispy baked eggplant fries as a healthy alternative to traditional french fries with a crispy coating of breadcrumbs and Parmesan cheese.
What you need:
- 1 large eggplant
- 1 tbsp olive oil
- 2/3 cup seasoned breadcrumbs (whole wheat or regular)
- 1/4 cup Parmesan cheese
- 1 tsp garlic powder
- 2 egg whites
- Cooking spray
Preheat the oven to 450 degrees. Cut the eggplant into fries, about ½ inch thick. Toss the eggplant with olive oil, salt, and pepper.
In a shallow dish, combine the breadcrumbs, Parmesan cheese, and garlic powder. Whisk the egg whites in a shallow dish.
Dip the eggplant into the egg whites and press into the breadcrumbs mixture to coat on both sides.
Cover a baking sheet with parchment paper or spray with cooking spray. Lay the fries out in a single layer on the baking sheet, making sure not to overcrowd the pan. Spray with cooking spray.
Bake for 15-17 minutes, carefully flipping after 10 minutes. They are ready when they are golden brown on the outside and tender on the inside.
