Asparagus Quiche

What you need:

  • 1/2 tbsp olive oil
  • 1/2 lb asparagus
  • 1/4 chopped red onion
  • 1 garlic clove, minced
  • 6 eggs
  • 1 cup nonfat milk
  • 3/4 cup shredded part skim mozzarella cheese
  • 1/4 cup crumbled feta cheese
  • Salt and pepper to taste
  • 1 refrigerated pie crust

Step 1 Preheat the oven to 375 degrees and place the frozen pie crust on the counter. In a large mixing bowl, whisk together the eggs. mozzarella and feta cheese, milk, salt, and pepper.

Step 2 Heat the olive oil in a skillet over medium high heat. Add the onions until they begin to become translucent. Add the asparagus and saute for 4-6 minutes until tender crisp. Add the garlic and cook for one minute until fragrant. Remove from heat.

Step 3 Place the asparagus and onions in the bottom of the pie crust.

Step 4 Pour egg mixture on top. Bake for 35-40 minutes until the center is firm and no longer jiggles. Let cool at least 10 minutes.
