Whenever I can I like to incorporate vegetables into my side dishes.  Not only does it make for less cleanup afterwards, it also makes it more likely that my non-vegetables eating friends will accidentally eat some greens.  This is especially true when you cut them up nice and small so they are almost impossible to pick around.   This simple dish makes a great side, base for proteins, and is terrific tossed with a green salad.

Ingredients

US METRICS
  • 1/2 cup couscous
  • 2 tsp. olive oil
  • 4 U green onions, diced
  • 2 U garlic cloves, minced
  • 2 U zucchinis, diced
  • Salt and pepper to taste

Cook the couscous according to package direction.

Meanwhile, heat the olive oil over medium heat. Add the onions and garlic and cook for 3-4 minutes until fragrant.

Add the zucchini and cook for 4-5 minutes until tender. Season with salt and pepper.

Fold into couscous.
