This Warm Apple and Lentil Salad has so much flavor from the warm apples, red wine vinegar dressing, arugula, parsley, and walnuts.
Lately I have been really into lentils. Lentil soup, creamy stove top lentils as a side dish, and especially lentil salads. I make up a big batch of lentils on the weekend or cheat and buy steamed lentils or canned lentils, which are both surprisingly good. Tossed with your favorite greens and veggies, they are the perfect hearty salad addition in my opinion.
While normal my lentil salads are a mishmash of leftovers and greens, this one with warm apples is something special. The sweetness of the apple goes really well with the earthiness of the lentils. Then once you combine them with fresh arugula, parsley, crunchy celery, and walnuts, it's really a dreamy combination of flavors. During summer months, you could definitely keep the apples fresh and crunchy, but for a colder night, nothing beats the warm apples.

- 1 cup dry lentils
- 2 cups water
- 2 tbsp olive oil
- 2 U apples, chopped
- 2 tbsp red wine vinegar
- 1 tbsp lemon juice
- 1/2 tsp Dijon mustard
- 4 cups arugula
- 2 U celery stalks, chopped
- 1 U shallot, sliced thin
- 1/4 cup parsley
- 1/4 cup walnuts
- Salt and pepper
Rinse the lentils. Add the lentils and water to a pan and bring to a boil. Once boiling, turn the heat down to low and maintain a gentle simmer. Cook for 25-30 minutes until lentils are tender, adding water if needed.
Meanwhile, prep the remaining ingredients and prepare the warm apples. Heat the olive oil over medium heat. Add the apples and saute until just tender crisp.
Make the dressing by mixing together the red wine vinegar, olive oil, lemon juice, and dijon mustard. If you like a sweeter dressing, add honey or maple syrup.
Once the lentils are cooked, season them with salt and pepper. Toss with apples, dressing, and remaining ingredients.
