Egg mugs have become one of my favorite quick breakfasts since there are virtually endless combinations of what you can put in them and what you can do with them after. From any combination of vegetables and cheese (like today's simple veggie and goat cheese egg mug) to crazy concoctions using leftover proteins, whole grains, and all kind of additions. Then they can be smashed between bread, wrapped up as burritos, eaten alongside fresh fruit or avocado. The possibilities are endless.

Ingredients

  • 1/2 cup broccoli (or veggies of your choice)
  • 1 U egg
  • 2 U egg whites
  • 2 tbsp. goat cheese
  • Salt and pepper

Directions

  1. Spray the inside of a mug with cooking spray. Add the vegetables and cook for -2 minutes until tender.
  2. Add the eggs and goat cheese. Stir together.
  3. Microwave on high for 1 ½ minutes.
