A simple and quick comfrot meal that you can make in under thirty minutes. I love vegetarian sausages and am always looking for new ways to use them at dinner time. Usually I make quick stir-fries and pasta dishes, but lately I have been loving them paired with a healthy potato cauliflower mash and some broccoli. You can add any fresh herbs, spices, or cheese to the dish as well for some extra flavor.

Ingredients

US METRICS
  • 4 U vegetarian sausages
  • 1 lb. potatoes, chopped (leave skins on, Paleo use sweet potatoes)
  • 4 cups cauliflower
  • 1/2 cup nonfat milk (broth for Paleo/Whole30)
  • 2 U garlic cloves, minced
  • 1 lb. baby broccoli (or regular)
  • Salt and pepper

Bring a large pot of salted water to a boil. Add the broccoli and cook for 3-4 minutes until tender. Remove using a slotted spoon and set aside.

Add the potatoes and cauliflower to the boiling water. Cook for 10-12 minutes until potatoes and cauliflower are tender. Drain and return to pot. Add the skim milk, garlic, salt, and pepper. Use a potato mash to mash to desired consistency.

Heat a skillet over medium high heat. Slice the sausages and add them in one layer to pan. Cook until browned, flip over, and cook on other side until browned. Remove and add broccoli to the skillet. Heat until warmed through. Serve sausages and broccoli over the potatoes.
