If you have been following the meal plans or Slender Kitchen for awhile, you know I am a huge fan of one dish meals and often include simple sausage bakes for simple dinners. Luckily with the great vegetarian and vegan sausages on the market, this meal isn't only for meat eaters. Pick out your favorite meatless sausage and bake it with cabbages and apples for a simple and delicious meal. If you like your vegetables softer, consider adding 1/2 cup of vegetable broth to the recipe as well.

Ingredients

US METRICS
  • 4 U vegan apple sage sausages (or other vegetarian sausage)
  • 2 U leeks, chopped
  • 1 U small cabbage, cut into 8 wedges
  • 1 U apple, chopped
  • 2 tsp olive oil
  • 1 tsp dried thyme
  • salt and pepper

Preheat the oven to 400 degrees.

Toss together the cabbage, leeks, apples, thyme, salt, pepper, and olive oil in a baking dish.

Layer the “sausages” on top. I kept mine whole but you could also slice them.

Bake for 30 minutes.
