Vegetarian Sausage, Apple, and Cabbage Bake

Preheat the oven to 400 degrees.
Toss together the cabbage, leeks, apples, thyme, salt, pepper, and olive oil in a baking dish.
Layer the “sausages” on top. I kept mine whole but you could also slice them.
Bake for 30 minutes.
