I debated what the call this recipe for quite awhile. It's kind of a frittata, it's kind of casserole, it could be an egg bake, hmm. I went with casserole, for no reason really, except that it sounded the most delicious and this recipe is definitely that. Eggs, turkey sausage, veggies, and cheese all baked together for a satisfying breakfast dish. If you have any leftovers (we never do!), this will keep for 4-5 days in the fridge and can be eaten warmed up or cold for breakfast or lunch. It's great paired with a salad or bowl of soup.

Ingredients

  • 2.5 tsp olive oil
  • 1.5 cups mushrooms, sliced
  • 1.5 cups zucchini, diced
  • 3/4 lb lean ground turkey sausage
  • 6 U eggs
  • 4 U egg whites
  • 3/4 cup skim milk
  • 3/4 cup part skim shredded mozzarella cheese
  • Salt and pepper

Directions

  1. Preheat the oven to 350 degrees.
  2. Heat the olive oil over medium heat. Brown the sausage. Stir in the onions, mushrooms, and zucchini and cook until just tender. Season with salt and pepper.
  3. Whisk together the eggs, egg whites, and skim milk. Season with salt and pepper. Fold in the cheese.
  4. Spray a baking dish with cooking spray. Add the vegetables and sausage to the bottom of the dish. Cover with eggs.
  5. Bake for 25-30 minutes until set.
