Vegetable and Cheddar Cheese Bowls

- 1 cup couscous
- 2 tsp. olive oil
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 U green pepper, sliced
- 1 U red pepper, sliced
- 8 oz. mushrooms
- 8 oz. broccoli florets
- 1 U sweet onion, sliced
- 1/2 tbsp. butter
- 1/2 tbsp. flour
- 3/4 cup reduced fat shredded cheddar cheese
- 2/3 cup skim milk
Cook the couscous according to package directions.
Heat a skillet over medium heat with olive oil. Add peppers, onions, and mushrooms and cook for 6-8 minutes. Add the broccoli along with 2 tbsp. water. Cook for 3-4 minutes until tender crisp.
Add the butter to a small saucepan. Once melted, whisk in the flour and cook for 2 minutes until lightly browned.
Add the milk and bring to a simmer. Once bubbling and thickened, reduce the heat to low and stir in the cheese.
Create the bowls by placing couscous on the bottom, topping with vegetable mixture, and then topping with cheese sauce.
