A few weeks back, my plan to make an oven baked schnitzel was almost foiled when I realized I accidentally used all the chicken at lunch time. Luckily I had some turkey cutlets in the freezer that quickly be an excellent substitute. The recipe couldn't be easier - pounded turkey cutlets, some egg and breadcrumbs, and a quick trip to a hot pan. I like to use Panko breadcrumbs because they are a bit lighter and I add a touch of Parmesan for flavor. Serve them up with some fresh lemon and a simple salad for a delicious meal.

  • 24 oz. turkey breast cutlets
  • 2 U egg whites
  • 3/4 cup Panko breadcrumbs
  • 2 tbsp. Parmesan cheese
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tbsp. vegetable oil
  • 1 U lemon

Directions

  1. Pound the turkey until it is about 1/8 inch thick.
  2. Mix together the breadcrumbs, cheese, salt, and pepper.
  3. Dip the turkey into the egg whites and then press in breadcrumb mixture on both sides.
  4. Heat oil over medium high heat.
  5. Add the turkey and cook for 3-4 minutes per side
