Breakfast wraps are one of the things you will find most often in my fridge and freezer. When I know I will have a busy morning, I love having these ready to go to pop in the microwave or toaster oven for a quick and healthy breakfast or lunch. They are both cheaper and healthier than a take out version. This wrap uses spinach, tomatoes, and salty goat cheese for a yummy combination.

Ingredients

US METRICS
  • 2 U eggs
  • 2 U egg whites
  • 1 U tomato, diced
  • 1 cup spinach
  • 4 tbsp crumbled goat cheese
  • 2 U low carb tortillas
  • salt and pepper to taste

Instructions

  1. Preheat a skillet over medium heat and spray with cooking spray. Whisk together the eggs and egg whites. Season with salt and pepper. Add to pan and scramble. Set aside.
  2. Add the spinach and tomatoes to the same pan and cook for about 3 minutes or until spinach is wilted. Season with salt and pepper to taste.
  3. Lay out the tortillas. Add the scrambled eggs, spinach and tomato mixture, and 2 tbsp. goat cheese to each tortilla. Roll up in plastic wrap and place in the fridge for breakfasts later in the week. If you are worried about the wrap becoming soggy, pack the eggs and spinach mixture separately and then assemble sandwiches in the morning.

Make-ahead: One serving is for breakfast this morning. The remaining serving is for breakfast during the week. Tip: Don’t like the idea of storing the cooked eggs all week? You could also add the egg whites, veggies, and cheese to a mug sprayed with cooking spray and microwave for 2 minutes in the morning. Add to wrap and enjoy. Want more protein? Consider adding some deli meat, ground turkey, or chicken sausage. Just make sure to adjust the points.

I'm dying to know what exact tortillas were used here that kept this recipe at 244 calories. One medium egg is 63 calories and 2 ounces of goat cheese are 162 calories. Tomatoes, egg whites, and spinach, while extremely low in calories, still have calories. So you're saying you found a tortilla that's less than 19 calories? What IS this MAGICAL TORTILLA?!?

Hi there! I am wondering if you misread the recipe, Each serving has 2 tablespoons of goat cheese, not 2 oz. So the goat cheese in the recipe is just 40 calories. With the eggs and veggies, any tortilla around 100 calories will work.

I liked this breakfast. It was a touch messy to pick up and eat, so I used knife and fork. Loved the goat cheese and tomatoes!
