Tomato Avocado Toast with a Fried Egg

Avocado toast may just be my favorite breakfast, especially when served on crunchy sourdough toast with a ripe sliced tomato, fried egg, and freshly grated Parmesan cheese.
If it was up to me I would probably eat avocado toast every day for breakfast. When it suddenly became trendy, I was a bit surprised but more excited that now everywhere I went there were fun variations of avocado toast. Yet when it comes down to making it at home, my favorite version is still this classic with fresh ripe tomatoes, a fried egg, some freshly grated Parmesan (or cheddar), and tons of salt and pepper. The very best breakfast, lunch, or dinner.
