Toasted Oat and Roasted Strawberry Parfaits

Preheat the oven to 425 degrees. Line a baking sheet with parchment paper
Toss the strawberries with brown sugar and vanilla extract. Spread out on baking sheet and roast for 12-15 minutes until they darken in color and become juicy.
Meanwhile heat a skillet over medium heat. Spray with cooking spray and add the oats. Sprinkle with cinnamon and a small pinch of salt. Cook until they begin to brown and toss the pan. Cook a few more minutes until oats are toasted.
To make parfaits, layer the yogurt, berries, and toasted oats. Repeat.
