When it is a clean out the cupboard type of night I usually think about 3 types of meals – soups, stirfrys, and tacos. Soups are generally a terrific catch all for cleaning out the fridge or pantry and stirfrys come in a close second place. However one of my favorites (no surprise!) is tacos. These type of clean out the cupboard tacos usually end up having some combination of beans and vegetables with a simple spice blend. Today I switched things up by substituting in some leftover sweet potato for the beans and the results were delish. Simple, quick, and healthy – they are a great meatless dinner option.

Ingredients

US METRICS
  • 3 cups cauliflower florets
  • 1 U sweet potato, peeled and cubed (small)
  • 1 U sweet onion, sliced thin
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 14 oz canned black beans, rinsed and drained
  • Salt and pepper
  • 8 U corn tortillas

Preheat the oven to 425 degrees. Cover a large baking sheet with parchment paper.

Toss the cauliflower, sweet potato, and sweet onion with lime juice, olive oil, and taco seasoning. Spread the cauliflower and sweet potatoes on the baking sheet in a single layer.

Roast for 25 minutes until the sweet potatoes and cauliflower are tender. Remove the pan from the oven and add the black beans. Cook an additional 3-5 minutes until beans are heated through.

Serve in warmed corn tortillas with your favorite toppings, Consider using avocado, queso fresco, cilantro, and salsa.
