Sweet Potato Spinach Tacos

- 3 cups sweet potatoes, peeled and cubed
- 2 tbsp water
- 2 tsp olive oil
- 1 U sweet onion, sliced thin
- 1 U garlic clove, minced
- 4 cups fresh spinach
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp oregano
- 1/2 tsp chili powder
- 2 tbsp lime juice
- salt and pepper

Add the sweet potato to a microwave safe dish and cook for 4-5 minutes or until tender. Alternatively you boil the potatoes for 8-10 minutes until fork tender and drain.
Add the oil to a skillet over medium high heat. Add the onion and cook for 4-6 minutes until tender. Add the sweet potatoes. Cook until they begin to brown.
Add the garlic and spinach. Cook for 3-4 minutes until spinach wilts.
Stir in all of the spices and cook for 1 minute. Turn off heat and squeeze in lime juice. Season with salt and pepper.
Serve in warm tortillas with your favorite salsa. My personal favorite is chipotle with these tacos.
