When I want a substitute for a potato fry and still want something hearty and potato like, I usually turn to turnips, celeriac, rutabaga, or butternut squash. Normally I choose whatever is on sale and then flavor them up to match the dish I am serving. Depending on where I am with calories for the day sometimes I roast them in olive oil but when I want to cut back on calories, I use egg whites. They help everything crisp up but with less fat and calories. It's up to you. If you decide to use egg whites, it cuts out 50 calories.

  • 4 cups turnips, sliced into thin fries
  • 2 tbsp. olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp chili powder
  • 1/2 tsp cinnamon

Directions

  1. Preheat the oven to 400 degrees. Cover a baking sheet with foil and spray with cooking spray. Toss the turnips with olive oil and spices.
  2. Lay out flat on the baking sheet, without having them overlap.
  3. Bake for 12 minutes. Flip over and bake for an additional 10 minutes.
