Store bought rotisserie chicken is one of those magic ingredients that can help you bring a meal together in under ten minutes. It is a constant in my fridge and I use it for all types of quick meals and even can be seen eating it cold right out of the fridge over the kitchen sink on occasion. However lately I have wanted to mix things up and starting making my own rotisserie turkey breast in the crockpot for a substitute for chicken. You can use it all the same ways but makes a nice substitute when you feel like you just can’t eat another chicken breast.

Ingredients

  • 6 lb bone-in turkey breast, cleaned with fat removed
  • 2 tbsp smoked paprika
  • 2 tsp coriander
  • 1 tsp ground cumin
  • 1 tsp black pepper
  • 2 tsp salt

Directions

  1. Make 3-5 aluminum balls and place in the bottom of the slow cooker. You can also wrap 3-5 small potatoes in the tinfoil and place those in the bottom of the slow cooker.
  2. Mix together all of the spices and rub it all over the turkey breast.
  3. Place the turkey breast, skin side up, into the crockpot on top of the foil balls.
  4. Cook on low for 6 hours.
  5. Optional: For crispy skin, preheat the oven to 500 degrees and roast the turkey for 10 minutes before serving to crisp up the skin.

Notes

In the photo I cooked the turkey breast with lemon, salt, pepper, and some fresh rosemary sprigs in the crockpot only. However I enjoy this spice rub more when cooking turkey this way.
