Remember a couple of weeks back when I made these Slow Cooker Tri Tip Tacos? Well….I have made them two more times since…we are a bit in love over here. And this last time I made them, I decided to throw in some black beans, beef broth, and dried Ancho chiles. The result? Delicious slow roasted meat and beans all cooked at once. No need to make an extra side dish. Served up with a simple green salad and you have a deliciously easy meal.

Ingredients

  • 2 U dried Ancho chiles, seeded
  • 4 cups beef broth
  • 1 tbsp smoked paprika
  • 1 tbsp. Ancho chile powder (depending on your heat preference)
  • 1 tsp cumin
  • 1 tsp oregano
  • 1/2 tsp. salt
  • 1 tsp black pepper
  • 2 lb lean tri-tip roast, all fat removed
  • 2 cups dry black beans
  • 1 U onion, sliced
  • 8 U cloves garlic, minced
  • 2 U bay leaves
  • Salt and pepper

Directions

  1. Slice the dried Ancho chiles on one slide and remove the stems and seeds, keeping the pepper mostly whole.
  2. Bring the beef broth to a boil and add the ancho chiles. Simmer for 10 minutes.
  3. Meanwhile combine the paprika, Ancho chile powder, cumin, salt, and pepper. Rub all over the beef.
  4. Add the beans, onion, and garlic to crockpot. Pour in the boiling beef broth and whole Ancho chiles.
  5. Place the beef on top and cover. Cook on low for 8 hours. Slice or shred the beef. Remove and discard the dried chile peppers, or chop them up and serve on the side for some extra heat.
