Today I am excited to be teaming up with Albertson's and White Wave foods to celebrate Earth Day and Earth Month, a time for us to step back and really think about our own footprint on the environment. While this is something I try to be conscious of, sometimes it is hard to really know what each of us can do to make a difference when it comes to the environment. With so much information and so many things we can be doing, it's gets overwhelming. However, today I am excited to share one easy way you can help make an impact that starts at your local grocery store.

Next time you head to the grocery store, think about choosing brands that actively work to minimize their environmental impact and produce their products responsibly. By doing this, we can show brands that we think this is something important and worthwhile. However, I know this can be tough! Sorting through what brands are environmentally responsible is tricky. That's why Albertson's is partnering with some great brands for Every Cart Counts! This program is designed to help people make healthier and more environmentally friendly choices while shopping. Participating brands include Earthbound Farm, Silk, So Delicious, Simply Pure, Vega and Horizon. And the best part is that during the entire month of April, Albertson's will be buying some lucky customers their entire carts of groceries when they spot one or more participating products!

Now let's talk about these pancakes for a minute. The blender is one of my favorite ways to make quick and easy pancakes, and is especially great if you are using oatmeal since it helps creates a smooth batter. For these pancakes, I combined Silk Strawberry Yogurt, oats, bananas, and Silk Unsweetened Vanilla Almond Milk to create a hearty, good for you pancake packed with fiber, protein, and whole grains. Topped with fresh fruit and a little honey, syrup, or melted nut butter - yum!

Strawberry Banana Oatmeal Blender Pancakes

Ingredients

US METRICS
  • 2 cups oats
  • 1 cup unsweetened almond milk
  • 2 U containers Silk Strawberry Dairy-Free Yogurt Alternative (or any strawberry yogurt)
  • 2 U bananas
  • 1.5 tsp. baking powder
  • 1 tsp. cinnamon
  • 1/8 tsp. salt
  • 2 U eggs

Instructions

  1. Add everything except the eggs go the blender. Blend until smooth. Add the eggs and pulse until fully combined.
  2. Heat a griddle or skillet over medium high heat. Spray with cooking spray. Add about 1/3 cup of batter per pancake. Cook for 3-4 minutes or until edges become firm. Flip and cook for 2-3 more minutes until cooked through. Repeat to cook all pancakes.
