Steak and cheese has to be one of the most delicious sandwiches around, but unfortunately most steak and cheese sandwiches contain over 1,000 calories. Yikes. So today let’s make a lightened up version using flavorful lean steak, sauteed onions and mushrooms, and a bell pepper in place of the rolls. Delicious, low carb, gluten free, and perfect for a meal or appetizer. I made these this weekend as a game day snack and they disappeared within minutes. If you can’t find sandwich steaks you could also use lean flank steak, fajita steak, or even deli roast beef. Sliced chicken would be great as well for chicken cheese steaks.

If you like a softer pepper, you will want to roast or microwave them first to soften them, otherwise the pepper will have a lot of crunch.
