Preheat the oven to 350 degrees. Spray a muffin tin with cooking spray. 5. 6. 7.
Microwave or sauté the spinach until wilted. It should take about 2 minutes in the microwave.
Whisk together the eggs, egg whites, spinach, and red pepper. Season with salt and pepper. Divide evenly among 3 muffin holes.
Cook for 10-15 minutes until the egg is cooked through.
Layer each muffin with 3 tbsp. of cheese and egg mixture. Top with other muffin half.
Press the sandwiches using a Panini press, grill (like a George Foreman), or skillet. You could also skip this step and lightly toast the muffins.
