Egg muffins rank up there as one of my favorite breakfasts. They can be made in virtually endless combinations of veggies, lean meats, cheeses, and even grains. Lately I have been continually reaching for this simple Southwest inspired egg muffin with red and green peppers, red onion, deli turkey, and a jalapeno for spice. Sometimes for a vegetarian version I replace the turkey with black beans or quinoa.
Southwest Turkey Egg Muffins

Preheat the oven to 350 degrees.
Spray a nonstick skillet with cooking spray. Add the peppers, onion, and jalapeno if using and cook until tender, about 6-8 minutes.
Meanwhile, whisk together the eggs. Season with salt and pepper.
Add the peppers, onions, and turkey to the eggs.
Spray a muffin tin with cooking spray. Pour in the egg mixture.
Bake for 20-25 minutes until puffed up and cooked through.
