I am always looking for new ways to make pork tenderloin in the slow cooker. The slow cooker is usually my favorite way to cook pork tenderloin since it stays moist and juicy without the constant fear of having it completely dry out. This simple recipe combines fresh orange juice, garlic, onion, mustard, and soy sauce to create a delicious sauce for the pork. If you like herbs, consider adding some rosemary as well.

Ingredients

  • 2 lbs. lean pork tenderloin
  • 1/4 cup low sodium soy sauce
  • 1/4 cup low sodium chicken broth
  • 2 tbsp. whole grain mustard
  • 1 tbsp. olive oil
  • 1/4 cup orange juice
  • 1 U packet Stevia (or to taste)
  • 1 U shallot, minced
  • 4 U garlic cloves, minced
  • 1 U red onion, sliced thin
  • Salt and pepper

Directions

  1. Mix together the soy sauce, mustard, olive oil, orange juice, Stevia, shallot, garlic, and chicken broth.
  2. Add the pork and onions to the slow cooker. Pour marinade over top.
  3. Cook on low for 6 hours. Slice and serve with sauce.
