Ropa Vieja is a Latin American dish that is normally made with beef. There are all different versions out there so I recommend experimenting a bit until you find your favorite one. The common ingredients are always onion, peppers, and tomato. From there some people like to add olives or capers, cilantro might make an appearence, and I have even seen peas added. Personally, I love mine with green olives but since not everyone in my family is on board, I add them individually after. Consider serving it in the traditional manner with rice and beans or use cauliflower rice for a lighter version. It's also delicious for tacos, in wraps, or used in a tomato based soup.

- 2.5 lbs. boneless skinless chicken breast
- 1 U green pepper
- 1 U red pepper
- 1 U onion, sliced thinly
- 4 U garlic cloves, minced
- 1 U bay leaf
- 1 tsp. cumin
- 1 tsp. oregano
- 1 cup chicken broth
- 4 tbsp. tomato paste
- 1/2 tsp. salt

Spray your slow cooker with cooking spray.
Add everything to the slow cooker and stir together.
Cook on low for around 4 hours. Cooking times may vary slightly.
