- 2 U eggs, boiled and chopped
- 2 U eggs whites, boiled with yolks discarded, chopped
- 1 tbsp light mayonnaise (or Greek yogurt)
- 1/2 tsp whole grain mustard
- 1 U stalk chopped celery
- 1 tbsp chopped fresh chives
- 1 tsp. lemon juice
- Salt and pepper to taste
Combine everything together in a large bowl and enjoy! It’s that simple.
