I originally saw this recipe about a year ago on the news, and honestly was a little in shock. Replace my beloved avocado with peas(!) in guacamole. It seemed crazy, like I was cheating on the avocado, especially since avocados are full of healthy fats and nutrients. However, yesterday some friends decided to stop by and I needed a quick snack to serve. I only had one avocado, which would never be enough, and then I remembered seeing this recipe and decided to give it a try, knowing full well I would not tell anyone there were peas in the guacamole. Surprisingly, it turned out great! No one had any idea and the resulting guacamole had lower calories and fat plus some additional fiber.

Ingredients

US METRICS
  • 1 U avocado
  • 1 cup frozen peas, defrosted
  • 1 tbsp cilantro, chopped
  • 1 tbsp red onion, chopped
  • 2 tsp fresh lime juice
  • 1 tsp jalapeno, chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup tomato, chopped (optional)

Mash the avocado and peas together in a medium bowl. Fold in the rest of the ingredients. Enjoy.

Blend all of the ingredients together using an immersion blender or low setting on a food processor.
