Shrimp and Sausage Kabobs

- 4 U low fat chicken sausages (Whole30® approved if needed)
- 1 lb raw shrimp
- 1 U zucchini, cut into rounds
- 1 U summer squash
- 1 U red onion, chopped
- 1.5 cups cherry tomatoes
- 1 tbsp olive oil
- 2 tbsp paprika
- 1/2 tbsp garlic powder
- 1/2 tbsp onion powder
- 1 tbsp dried oregano
- 1 tbsp dried thyme
- 1/2 tbsp chili powder
Mix together the paprika, garlic powder, onion powder, oregano, thyme, and chili powder if using.
Toss the sausage, shrimp, zucchini, cherry tomatoes, and onion with olive oil. Then toss with spice mixture.
Thread onto skewers.
To grill, place on a medium hot grill (or grill pan) and cook for 4-5 minutes per side. To broil, place on a baking sheet and cook for 4 minutes per side.
