White chicken chili is one of my favorite dishes. It has so much flavor, is packed with protein and fiber, can feed a crowd, and freezes great. However sometimes when the craving strikes, the last thing I want to do is spend hours roasting veggies, making homemade green salsa, and cooking beans. So on those days, I make this delicious shortcut recipe that couldn't be easier. It takes about 20 minutes start to finish and tastes great with some added avocado, baked tortilla chips, queso fresco, cilantro, or sour cream.

Ingredients

US METRICS
  • 1.67 lbs. boneless skinless chicken thighs
  • 4 cups low sodium chicken broth
  • 20 oz. canned pinto beans, drained and rinsed
  • 1.5 cups green salsa
  • 1 tsp. cumin
  • 1 tsp. oregano
  • Salt and pepper

Add the chicken thighs to a large pot and cover with chicken broth. Bring to boil and then turn down to a simmer. Cook for 10 minutes or until chicken is cooked through. Remove and shred using 2 forks.

Add chicken back to the pot along with the beans, salsa, cumin, and oregano.

Bring to a simmer and let simmer for 10 minutes.
