It comes together in under 20 minutes if you cook the squash in the microwave and the flavors are a bit reminscent of fried rice, which my whole family loves.

Ingredients

US METRICS
  • 1 U spaghetti squash
  • 2 tbsp sesame oil
  • 2 tbsp low sodium soy sauce (GF if needed, coconut aminos for Whole30)
  • 1/4 cup scallions
  • 2/3 cup shelled edamame

Pierce a spaghetti squash with a fork all over and then microwave for 10-12 minutes until tender. Carefully cut in half and remove seeds.

Toss with sesame oil, soy sauce, scallions, and edamame.
