Sesame Kale Salad with Mango and Blueberries Recipe
I woke up this morning feeling like I needed some greens. Some real, hearty, crunchy, feel good for you greens. Kale leaps out as a ready and delicious solution. Wanting to avoid a trip to the store, I went with what I had around – crunchy Lacinto kale, a delicious, sweet mango, some tart blueberries, sliced almonds, and a simple homemade dressing of sesame oil, honey, some rice wine vinegar, a pinch of salt, and a sprinkling of red pepper flakes. Refreshing, packed with nutrients, and great for a meal or side dish. It also keeps well so don’t be afraid to whip up a big batch and keep it in the fridge for a couple of days.
