I woke up this morning feeling like I needed some greens. Some real, hearty, crunchy, feel good for you greens. Kale leaps out as a ready and delicious solution. Wanting to avoid a trip to the store, I went with what I had around – crunchy Lacinto kale, a delicious, sweet mango, some tart blueberries, sliced almonds, and a simple homemade dressing of sesame oil, honey, some rice wine vinegar, a pinch of salt, and a sprinkling of red pepper flakes. Refreshing, packed with nutrients, and great for a meal or side dish. It also keeps well so don’t be afraid to whip up a big batch and keep it in the fridge for a couple of days.

Ingredients

  • 4 cups kale, chopped with stems removed ( prefer Lacinto)
  • 1 tbsp sesame oil, divided
  • 1 tbsp honey
  • 1.5 tbsp rice wine vinegar
  • salt and pepper
  • 1/16 tsp red pepper flakes
  • 1 cup mango, peeled and chopped
  • 1/2 cup blueberries
  • 2 tbsp sliced almonds

Directions

  1. Add the kale to a bowl with half the sesame oil. Sprinkle some salt on the kale and then gently massage the kale with your fingers to soften it up.
  2. Mix together the remaining oil, honey, rice wine vinegar, salt, pepper, and red pepper flakes to make the dressing.
  3. Pour the dressing over the kale and toss to coat. Add the mango, blueberries, and almonds.
