Sausage, Spinach, and Polenta Bowl

Polenta is one of those ingredients it took me way to long to discover. There were years where I just plain hadn't heard of it followed by years of not knowing how to cook it. Then I finally took the plunge and now it's one of my favorite simple side dishes. It's especially great for those who are sick of rice or potatoes every night. This simple polenta bowl couldn't be more comforting and is paired with spinach, sausage, and tomatoes for a filling dish. Consider some cheese or a poached egg if you really want to make it special.
