Ingredients

US METRICS
  • 4 U chicken sausages
  • 1/2 lb red potatoes, chopped
  • 2 U leeks, chopped
  • 1 U small cabbage, cut into 8 wedges
  • 1 U apple, chopped
  • 2 tsp olive oil
  • 1.5 tsp dried thyme
  • salt and pepper

Preheat the oven to 400 degrees.

Toss together the potatoes, cabbage, leeks, apples, thyme, salt, pepper, and olive oil in a baking dish.

Layer the sausages on top. I kept mine whole but you could also slice them.

Bake for 30 minutes or until potatoes are tender. Cooking time may vary slightly based on size of potatoes.
