This delicious and easy breakfast has a secret ingredient - cottage cheese! If you have been following the blog for awhile, you know that egg mugs are one of my favorite breakfasts since they are packed with protein and ready in under 5 minutes. However I just learned that adding 1-2 tablespoons of cottage cheese to your egg mugs makes a huge difference. The cottage cheese makes everything stay moist and creamy. No more dry eggs. For this version, you just add salsa and green onions to the eggs. You could definitely add some cheese as well and it's delish topped with some chopped avocado.
