Roasted poblano peppers and sweet onions, a juicy spiced burger, and melted cheese make my burger dreams come true. Now that the weather is finally warming up it seems like the perfect time to start sharing grill recipes. Plus we finally have a new grill so I am dying to get out and experiment. A classic burger felt like the right place to start but of course I needed to spice things up a bit with mildly spicy poblanos (you could substitute red bell peppers for no spice) and a simple burger patty flavored with cumin, paprika, and coriander. I topped mine with melted mozzarella but feta would be incredible. I also would recommend adding some avocado to counterbalance the heat.
Roasted Poblano Cheeseburger

- 2 U poblano peppers
- 1 U sweet onion
- 1 lb. 95% lean ground beef
- 1/2 tsp. ground cumin
- 1/2 tsp paprika
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp. coriander
- 1/2 cup part skim shredded mozzarella cheese

Preheat your grill. Place the poblano peppers (whole) and onion slices the grill. Grill until poblanos are charred on all sides, about 8-10 minutes and onions are tender and browned. They may be ready at different times. Remove the peppers from the grill and cover with dish towel. Allow to steam for about 5 minutes. Remove charred skin and seeds. Set the onions aside.
Meanwhile prepare the burger patties by combining the ground beef with the spices, salt, and pepper. Divide into patties. Grill each patty for 3-5 minutes per side to desired temperature. About one minute before burgers are finished, place the onions, poblano peppers, and cheese on top. so cheese melts. Serve on your favorite roll or wrapped in lettuce.
