Ingredients

US METRICS
  • 2 U zucchini, diced
  • 1 U summer squash, diced
  • 1 tbsp olive oil
  • 1 U red pepper, diced
  • 1/2 cup red onion, diced
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1 U Juice of 1 lime
  • Salt and pepper to taste

Preheat the oven to 400 degrees.

Toss the zucchini, squash, red onion, red pepper, green pepper, oregano garlic powder, salt, and pepper.

Place in a single layer on a baking sheet and roast for 15 minutes until browning.

Squeeze lime juice over top.

While I liked this recipe, it was a touch watery and didn't crisp up as much as I expected. I'm going to use less squash and more onion next time.
