  • 2 U zucchini, diced
  • 1 U summer squash, diced
  • 1 tbsp olive oil
  • 1 U red pepper, diced
  • 1/2 cup red onion, diced
  • 1/2 tsp oregano
  • 1/2 tsp garlic powder
  • 1 U Juice of 1 lime
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 400 degrees.
  2. Toss the zucchini, squash, red onion, red pepper, green pepper, oregano garlic powder, salt, and pepper.
  3. Place in a single layer on a baking sheet and roast for 15 minutes until browning.
  4. Squeeze lime juice over top.
