Brussels sprouts are one of my absolute favorite side dishes this time of year. Crispy, crunchy, and packed with flavor they make a delicious side dish or base for a complete meal when topped with poached eggs or a grilled protein. This spin on simple roasted Brussels sprouts adds a delicious twist with tangy balsamic and sweet maple syrup.

Ingredients

  • 1 pound Brussels sprouts
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper

Preheat the oven to 400 degrees.

Cut the Brussels sprouts in half and toss in a bowl with olive oil, vinegar, maple syrup, salt, and pepper.

Roast in the oven for 40 minutes, shaking the dish every 10-15 minutes until dark and caramelized. Watch cooking time since it can vary based on the size of the sprouts.
