Sirloin steak is one that is often overlooked as a low calorie option. The key to cooking a great sirloin steak is to cook it whole and then let it rest and slice it very thinly against the grain. This keeps the steak tender and delicious. For this simple recipe, we pair the steak with garlic, rosemary, and oregano and then briefly roast it in the oven until it reaches a nice medium or medium rare. Served with some mashed potatoes, roasted vegetables, or a nice big salad, it makes a perfect meal.

  • 1.67 lbs. lean sirloin beef
  • 1 tsp. salt, preferably kosher
  • 1 tsp. black pepper
  • 4 U garlic cloves, minced
  • 1.5 tbsp. fresh rosemary
  • 1 tsp. dried oregano

Directions

  1. Preheat the oven to 400 degrees. Spray a roasting pan with cooking spray,
  2. Combine salt, pepper, garlic, rosemary, and oregano. Rub it onto one side of the steak.
  3. Place the steak in the roasting pan with the herbs facing up.
  4. Roast for 17-20 minutes for medium. Let rest for 5 minutes before slicing thin against the grain to serve.
