Roasted Dijon Cabbage

Preheat the oven to 400 degrees.
Place the cabbage on a lined or prepared baking sheet.
Stir together the olive oil, mustard, and garlic. Brush onto the cabbage wedges. Season with salt and pepper.
Roast for 35-45 minutes until tender. For a faster cooking time, make 12-16 wedges instead of 8.
