Lately I have testing out some new Thanksgiving side recipes and wanted to do something different than traditional roasted squash. After trying some roasted vegetables with miso in a restaurant recently, I decided to try some at home with squash. The recipe is incredible simple just squash tossed with melted miso and butter, but the results are delicious. Rich in flavor and low in calories. They taste great with a squeeze of lime or lemon on top. I still haven’t decided yet if I will make these for Thanksgiving, but I will definitely be making it as a side dish.

The Recipe

Roasted Delicata Squash with Butter and Miso

Ingredients

US METRICS
  • 2 cups delicata squash, seeded and cut into slices
  • 1.5 tbsp light butter
  • 1.5 tbsp white miso

Instructions

  1. Preheat the oven to 400 degrees.
  2. Melt the butter and miso together. Stir until smooth.
  3. Toss the squash with the miso butter.
  4. Lay out flat on the baking sheet, without having them overlap.
  5. Roast for 15 minutes. Flip and roast for 10 more minutes.
