You will never believe how tasty this simple dish of Chickpeas and Broccoli is and it will quickly become a favorite healthy vegetarian meal.

I have always been a huge fan of roasted chickpeas. The simple act of roasting chickpeas with some olive oil and spices brings out a natural nuttiness that is delicious. Plus they get nice and crispy on the outside. This dish capitalizes on those delicious roasted chickpeas and pairs it with nutty roasted broccoli and a savory homemade spice blend.

Served with a big bowl of rice, wrapped up as a burrito, or over a big bowl of greens - it's a meatless meal you will love.

Ingredients

US METRICS
  • 2 cups canned chickpeas, drained and rinsed
  • 1 U onion, chopped
  • 1 U red bell pepper, chopped
  • 3 cups broccoli, chopped
  • 2 tbsp olive oil
  • 1.5 tbsp soy sauce
  • 1.5 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp coriander
  • Salt and pepper
  • 3 U cloves garlic, diced
  • 1 U lemon

Preheat the oven to 425 degrees.

Toss the chickpeas, onion, red pepper, and broccoli with the olive oil, soy sauce, and all the spices. Lay flat on a baking sheet and roast for 20 minutes, shaking the pan 1-2 times.

After 20 minutes, add the garlic to the pan and roast for 10 more minutes. Season with salt and pepper if needed.
